Original Recipe: Pioneer Woman’s Beef and Snow Peas
This recipe will make tofu skeptics like tofu! I myself like tofu, but like brussel sprouts, it needs to be cooked correctly. This recipe always has me wanting more!
One difference than the Pioneer Woman is coat the tofu in cornstarch to mimic the crispy sear you’d get on beef. It makes for delicious tofu!

PIONEER WOMAN’S “BEEF AND SNOW PEAS”

Ingredients:
1 14 oz extra firm tofu
1/3 cup low-sodium soy sauce (low-sodium is important here)
2 tbsp cooking sherry wine
1 tbsp brown sugar (I use Truvia’s brown sugar to reduce cane sugar, but regular is fine too)
1 tsp minced ginger
6 oz (about 2 cups) snow peas
3 scallions, cut in half inch pieces
3 tbsp extra virgin olive oil
Directions:
- Prepare rice according to package directions to serve with the tofu and snow peas.
- Drain tofu with a press or wrap it in a cloth and place a few heavy books on top for ten minutes.
- While the tofu is draining, combine the soy sauce, sherry wine, brown sugar, and ginger. Cut the scallions.
- When the tofu is finished, cut it in 1/4 inch squares like you see in the picture.
- In a bowl, add the cornstarch and dip each tofu piece to coat one by one. I recommend this method instead of mixing the tofu in a bowl so the tofu doesn’t break.
- In a large pan, add 1 tbsp oil on medium high heat. When it begins to shimmer, add the snow peas and cook for 1 minute. Toss 30 seconds in to ensure even cooking on both sides. Remove and put it on a plate.
- Once the snow peas are finished, add 2 more tbsp of oil on medium high heat, wait until it’s shimmering, and then add the tofu and cook until golden brown, about 4-5 minutes. Flip and cook another 4-5 minutes until golden brown on the next side.
- When the tofu is golden, add snow peas, scallions and mixture and cook until reduced for about 4-5 minutes, until the mixture has thickened.
