Vegan Pistachio and Cardamom Overnight Oats (Overnight Oats Idea)

When I saw pistachio butter in the store, I knew I had to try it but I wasn’t sure how. That’s when I had an overnight oats recipe idea! These oats has a truly unique flavor combination with the pistachios and cardamom pairing. I am a chocolate lover, and to me, it’s just as good as chocolate, if not better!

HOW TO SWEETEN: I have never used agave nextar before, but I hear it is a neutral sweetener I am sure would go fine in here. I use Truvia sugar, and it works just fine. I would start off with about a 1/2 tbsp of agave to test, and if you want it sweeter, add another 1/2 tbsp.

On the surface this recipe seems expensive, but in serving sizes, it comes down to a whopping $1.29 per serving (not including toppings)! So you can eat it as much as you like without breaking the bank!

VEGAN PISTACHIO AND CARDAMOM OVERNIGHT OATS

Ingredients:

3/4 cup soy milk or other non-dairy milk
1/2 cup oats (rolled or quick)
1 tbsp pistachio butter
1 tbsp sugar
1/2 tsp cardamom
pinch of salt
Additional toppings: banana, pistachio nuts

Directions:

  1. Put the soy milk, pistachio butter, cardamom, sugar, and salt in a container and whisk with a fork until the pistachio butter is combined with the soy milk.
  2. Add the oats and stir.
  3. Let sit up for four hours or overnight in the fridge.
  4. Add additional toppings as you like.
