When I saw pistachio butter in the store, I knew I had to try it but I wasn’t sure how. That’s when I had an overnight oats recipe idea! These oats has a truly unique flavor combination with the pistachios and cardamom pairing. I am a chocolate lover, and to me, it’s just as good as chocolate, if not better!
HOW TO SWEETEN: I have never used agave nextar before, but I hear it is a neutral sweetener I am sure would go fine in here. I use Truvia sugar, and it works just fine. I would start off with about a 1/2 tbsp of agave to test, and if you want it sweeter, add another 1/2 tbsp.
On the surface this recipe seems expensive, but in serving sizes, it comes down to a whopping $1.29 per serving (not including toppings)! So you can eat it as much as you like without breaking the bank!
VEGAN PISTACHIO AND CARDAMOM OVERNIGHT OATS

Ingredients:
3/4 cup soy milk or other non-dairy milk
1/2 cup oats (rolled or quick)
1 tbsp pistachio butter
1 tbsp sugar
1/2 tsp cardamom
pinch of salt
Additional toppings: banana, pistachio nuts
Directions:
- Put the soy milk, pistachio butter, cardamom, sugar, and salt in a container and whisk with a fork until the pistachio butter is combined with the soy milk.
- Add the oats and stir.
- Let sit up for four hours or overnight in the fridge.
- Add additional toppings as you like.
