Vegan Sloppy Joes Recipe with TVP

These are perfect for a quick summer meal, or any time of the year. Add French fries or chips to make a complete meal!

VEGAN SLOPPY JOES

Cook Time: 16-18 minutes
Prep Time: 10 minutes
Total Time: 26-28 minutes
Serving Size: 1/2 cup + bun
Total Servings: 3

Ingredients:

1 cup TVP
1 cup vegetable or beef bouillon (or 1 cup vegetable broth)

1 cup tomato sauce
1 tbsp tsp soy sauce
1 tsp vegan Worcestershire sauce
1 tbsp olive oil
1 green bell pepper
½ cup onion
2 garlic cloves
2 tsp chili powder
½ tsp smoked paprika
½ tsp cumin
2 tsp brown sugar

For the hamburger buns:

3 hamburger buns
1 1/2 tbsp vegan butter

Directions:

  1. Boil 1 cup of water and add the bouillon, soy sauce, and Worcestershire sauce.
  2. Add the TVP and let sit for 10 minutes or until the TVP absorbs the water.
  3. Meanwhile, cut the green pepper, onion, and garlic.
  4. When the TVP is done, add the oil on medium heat to a medium-sized pan.
  5. Add the green pepper first because it will take the longest to cook. Cook two minutes.
  6. Add the onion. Cook two minutes.
  7. Add the garlic. Cook 1 minute.
  8. Add the spices, brown sugar, and TVP. Cook for about a minute to coat the TVP.
  9. Add the tomato sauce and cook for an additional 10 minutes until the sauce is reduced.
  10. To a pan on medium heat, add 1/2 tbsp butter per bun and toast each face down. Toast the insides on for 2-3 minutes.
