VEGAN AMERICAN GOULASH

Cook Time: 20 minutes (+25 more if using dry lentils)
Prep Time: 5 minutes
Total Time: 25 minutes (or 50 minutes)
Serving Size: 1 cup
Total Servings: 3

Ingredients:

  • 2 cups cooked lentils (1 cup uncooked)
  • 2 cups cooked elbow pasta (1 cup uncooked)
  • 2 3/4 cups crushed tomatoes with puree
2 3/4 cups crushed tomatoes with 1 tbsp tomato paste*
  • 1/2 cup chopped onions
  • 2 garlic cloves, minced
  • 1 tsp parsley
  • 1/2 tsp thyme
  • 1/4 tsp paprika

*Note: Some crushed tomatoes come with puree. You can buy this, but if you can’t find it, used crushed tomatoes with 1 tbsp of tomato paste. This is important to thicken the sauce.

Directions:

  1. If using dry lentils, cook 1 cup in 3 cups of water for 45 minutes over medium heat.
  2. Meanwhile, prepare the pasta and chop the vegetables.
  3. When the lentils and pasta are ready, saute the onion over medium heat. I used the same pot I cooked the pasta in.
  4. Add the garlic, herbs, and spices. Cook for about 30 seconds.
  5. Add the crushed tomatoes.
  6. Add the pasta and lentils. Cook for about 5 minutes until the tomato sauce thickens.
