This is easy to prepare, making it perfect for a weeknight dinner or a cozy weekend meal. Plus, it’s ideal for leftovers—simply reheat and enjoy a warm, comforting bowl of goulash any day of the week.
VEGAN AMERICAN GOULASH
Cook Time: 20 minutes (+25 more if using dry lentils)

Total Time: 25 minutes (or 50 minutes)

Ingredients:
- 2 cups cooked lentils (1 cup uncooked)
- 2 cups cooked elbow pasta (1 cup uncooked)
- 2 3/4 cups crushed tomatoes with puree
2 3/4 cups crushed tomatoes with 1 tbsp tomato paste* - 1/2 cup chopped onions
- 2 garlic cloves, minced
- 1 tsp parsley
- 1/2 tsp thyme
- 1/4 tsp paprika
*Note: Some crushed tomatoes come with puree. You can buy this, but if you can’t find it, used crushed tomatoes with 1 tbsp of tomato paste. This is important to thicken the sauce.
Directions:
- If using dry lentils, cook 1 cup in 3 cups of water for 45 minutes over medium heat.
- Meanwhile, prepare the pasta and chop the vegetables.
- When the lentils and pasta are ready, saute the onion over medium heat. I used the same pot I cooked the pasta in.
- Add the garlic, herbs, and spices. Cook for about 30 seconds.
- Add the crushed tomatoes.
- Add the pasta and lentils. Cook for about 5 minutes until the tomato sauce thickens.
