Swap the eggs for tofu in fried rice! Crispy tofu, colorful veggies, and a soy sauce come together in this easy and delicious dish. Perfect for a quick weeknight meal or meal prep.
TOFU FRIED RICE

Ingredients:
- 1 14 oz block of tofu
- 3 cups day old long-grain rice
- 1/2 cup onion, chopped (about 1/2 large onion)
- 1/2 cup carrot, chopped (about 1 large)
- 1 cup frozen peas
- 1 tbsp oil (olive oil or a neutral oil)
- 1 tbsp sesame oil
- 2 large cloves of garlic, minced
- 1 tbsp ginger, minced
- 1/4 soy sauce (Kikkoman recommended or other high quality brand)
- 1/4 tsp pepper (ground recommended)
Directions:
- Drain the tofu for ten minutes using a book or tofu press.
- While the tofu is draining, prepare the onion, carrot, garlic, and ginger.
- When the tofu is finished, crumble it with your hands and add the olive or neutral oil to a pan. On medium heat, cook for 4-5 minutes without stirring. Stir and it should look crispy on the other side. After stirring, let cook for another 4-5 minutes until golden and crispy. Take it out of the pan onto a plate to cook the vegetables.
- Crank the heat to medium to high heat. Add the sesame oil. Add the onions and garlic. Cook for 3-4 minutes until the vegetables are tender.
- Add the peas and cook for about a minute until heated through.
- Add the garlic and ginger and cook for about 30 seconds until fragrant.
- Add the tofu, rice, soy sauce, and pepper and stir.
