Tofu Fried Rice

Swap the eggs for tofu in fried rice! Crispy tofu, colorful veggies, and a soy sauce come together in this easy and delicious dish. Perfect for a quick weeknight meal or meal prep.

TOFU FRIED RICE

Ingredients:

  • 1 14 oz block of tofu
  • 3 cups day old long-grain rice
  • 1/2 cup onion, chopped (about 1/2 large onion)
  • 1/2 cup carrot, chopped (about 1 large)
  • 1 cup frozen peas
  • 1 tbsp oil (olive oil or a neutral oil)
  • 1 tbsp sesame oil
  • 2 large cloves of garlic, minced
  • 1 tbsp ginger, minced
  • 1/4 soy sauce (Kikkoman recommended or other high quality brand)
  • 1/4 tsp pepper (ground recommended)

Directions:

  1. Drain the tofu for ten minutes using a book or tofu press.
  2. While the tofu is draining, prepare the onion, carrot, garlic, and ginger.
  3. When the tofu is finished, crumble it with your hands and add the olive or neutral oil to a pan. On medium heat, cook for 4-5 minutes without stirring. Stir and it should look crispy on the other side. After stirring, let cook for another 4-5 minutes until golden and crispy. Take it out of the pan onto a plate to cook the vegetables.
  4. Crank the heat to medium to high heat. Add the sesame oil. Add the onions and garlic. Cook for 3-4 minutes until the vegetables are tender.
  5. Add the peas and cook for about a minute until heated through.
  6. Add the garlic and ginger and cook for about 30 seconds until fragrant.
  7. Add the tofu, rice, soy sauce, and pepper and stir.
