Classic Vegan Mashed Potatoes

Do you need a classic mashed potato recipe? Look on further! These are fluffy and delicious and will be on repeat for one of your favorite go-to side meals.

Ingredients:

  • 6 medium russet potatoes (about 4-5 inches long each)
  • 1/2 cup raw cashew
  • 6 tbsp vegan butter (I use Country Crock in the US)
  • 1 tsp salt + more to taste
  • 1/2 pepper + more to taste

Directions:

  1. Pour about 1 and 1/2 cups over the raw cashews. Let sit for 20 minutes.
  2. In a large pan on high heat, boil enough water to cover the potatoes.
  3. Meanwhile, shred and dice the potatoes into 1/2-1 inch cubes.
  4. When the water is boiling, add them to the pot. Lower the heat to medium and cook for about 15 minutes.
  5. By this time, the cashews should be finished soaking. Drain them and add them to a blender plus 1 cup of water. Blend for about 1-2 minutes to ensure they are well-blended.
  6. Drain the potatoes. I let them sit for 3-4 minutes to ensure all the water is drained.
  7. Return to the pot and add the butter, cream, salt, and pepper.
  8. Mash until smooth.
