Ingredients:
- 6 medium russet potatoes (about 4-5 inches long each)
- 1/2 cup raw cashew
- 6 tbsp vegan butter (I use Country Crock in the US)
- 1 tsp salt + more to taste
- 1/2 pepper + more to taste
Directions:
- Pour about 1 and 1/2 cups over the raw cashews. Let sit for 20 minutes.
- In a large pan on high heat, boil enough water to cover the potatoes.
- Meanwhile, shred and dice the potatoes into 1/2-1 inch cubes.
- When the water is boiling, add them to the pot. Lower the heat to medium and cook for about 15 minutes.
- By this time, the cashews should be finished soaking. Drain them and add them to a blender plus 1 cup of water. Blend for about 1-2 minutes to ensure they are well-blended.
- Drain the potatoes. I let them sit for 3-4 minutes to ensure all the water is drained.
- Return to the pot and add the butter, cream, salt, and pepper.
- Mash until smooth.
