Vegan Baked Beans

These baked beans are smokey and flavorful with just enough touch of sweetness! They taste just like Bush’s Baked Beans but have a heartier sauce. To make it healthier, I use Truvia Brown Sugar and it works just as good!

VEGAN BAKED BEANS

Cook Time: 1 hour
Prep Time: 10 minutes
Total Time: 1 hours and 10 minutes
Serving Size: 1/2 cup
Total Servings: 6 1/2 cups

Ingredients:

2 cans of white beans or navy beans*
1 cup onion, diced
3 garlic cloves, minced
2 cups vegetable broth**
2 tbsp tomato paste
2 tbsp molasses
1 tbsp apple cider vinegar
1 tbsp soy sauce
1 tsp liquid smoke
1 tsp Worcestershire sauce
1/4 cup brown sugar
1 tsp smoked paprika
1/2 tsp cumin
1 tbsp extra virgin olive oil

Directions:

  1. Drain the beans.
  2. Prepare the onion and garlic.
  3. On medium heat, saute the onions for about 4-5 minutes until transluscent.
  4. Meanwhile, prepare the broth mixture by adding the vegetable broth, tomato paste, molasses, apple cider vinegar, soy sauce, liquid smoke, brown sugar, smoked paprika, and cumin.
  5. When the onion is finished, add the garlic and saute for about 30 seconds until fragrant.
  6. Add the beans and broth.
  7. Cook covered on slow to medium heat for about 1 hour.
