These baked beans are smokey and flavorful with just enough touch of sweetness! They taste just like Bush’s Baked Beans but have a heartier sauce. To make it healthier, I use Truvia Brown Sugar and it works just as good!
VEGAN BAKED BEANS
Cook Time: 1 hour
Prep Time: 10 minutes
Total Time: 1 hours and 10 minutes
Serving Size: 1/2 cup
Total Servings: 6 1/2 cups
Ingredients:
2 cans of white beans or navy beans*
1 cup onion, diced
3 garlic cloves, minced
2 cups vegetable broth**
2 tbsp tomato paste
2 tbsp molasses
1 tbsp apple cider vinegar
1 tbsp soy sauce
1 tsp liquid smoke
1 tsp Worcestershire sauce
1/4 cup brown sugar
1 tsp smoked paprika
1/2 tsp cumin
1 tbsp extra virgin olive oil
Directions:
- Drain the beans.
- Prepare the onion and garlic.
- On medium heat, saute the onions for about 4-5 minutes until transluscent.
- Meanwhile, prepare the broth mixture by adding the vegetable broth, tomato paste, molasses, apple cider vinegar, soy sauce, liquid smoke, brown sugar, smoked paprika, and cumin.
- When the onion is finished, add the garlic and saute for about 30 seconds until fragrant.
- Add the beans and broth.
- Cook covered on slow to medium heat for about 1 hour.
