Perfect for a vegan BBQ side, corn elote is bursting with flavor from the mayo, vegan parm, and cilantro!
VEGAN ELOTE CORN

Ingredients:
4 corn on the cob*
1/4 cup mayo
1 tbsp lime (about half a lime)
1/2 tsp chili powder
1/4 tsp garlic powder
1/4 tsp salt
1/4 cup chopped cilantro
1/4 cup cashew parmesan (recipe below)
CASHEW PARMESAN
1/4 cup raw cashews
2 tbsp nutritional yeast
1/4 tsp garlic powder
1/4 tsp salt
*You can use frozen corn on the cob for this too, but be sure to defrost the corn or adjust the time to ensure the corn is cooked. Skip step 7 in the directions as it’s not necessary.
Directions:
- Pre-heat the oven to 400 degrees Fahrenheit.
- Make the cashew parmesan. In blender or food processor, combine all the ingredients until it’s a powder. See video for directions.
- When the oven is finished pre-heating, add the corn on the oven racks and roast for 25 minutes.
- Continue to prepare the other ingredients. To make the sauce, add the mayonnaise, lime, chili powder, garlic powder, and salt.
- Cut the cilantro.
- When the corn is finished cooking, let it cool down for 5-10 minutes before removing the husk. This will make it easier on your hands.
- Remove the husks and the string.
- With a basting brush or spoon, brush the sauce fully around each cob.
- Sprinkle the cashew parmesan fully around.
- Sprinkle the cilantro fully around.
- Serve warm.
