Vegan Elote Corn

Perfect for a vegan BBQ side, corn elote is bursting with flavor from the mayo, vegan parm, and cilantro!

VEGAN ELOTE CORN

Ingredients:

4 corn on the cob*
1/4 cup mayo
1 tbsp lime (about half a lime)
1/2 tsp chili powder
1/4 tsp garlic powder
1/4 tsp salt
1/4 cup chopped cilantro
1/4 cup cashew parmesan (recipe below)

CASHEW PARMESAN

1/4 cup raw cashews
2 tbsp nutritional yeast
1/4 tsp garlic powder
1/4 tsp salt

*You can use frozen corn on the cob for this too, but be sure to defrost the corn or adjust the time to ensure the corn is cooked. Skip step 7 in the directions as it’s not necessary.

Directions:

  1. Pre-heat the oven to 400 degrees Fahrenheit.
  2. Make the cashew parmesan. In blender or food processor, combine all the ingredients until it’s a powder. See video for directions.
  3. When the oven is finished pre-heating, add the corn on the oven racks and roast for 25 minutes.
  4. Continue to prepare the other ingredients. To make the sauce, add the mayonnaise, lime, chili powder, garlic powder, and salt.
  5. Cut the cilantro.
  6. When the corn is finished cooking, let it cool down for 5-10 minutes before removing the husk. This will make it easier on your hands.
  7. Remove the husks and the string.
  8. With a basting brush or spoon, brush the sauce fully around each cob.
  9. Sprinkle the cashew parmesan fully around.
  10. Sprinkle the cilantro fully around.
  11. Serve warm.
