LOW-CARB TEMPEH BACON AND TOFU EGG SANDWICH

Ingredients:
1 slice of tofu, cut in circles
4 slices tempeh
1 slice vegan cheese
or 2 tbsp grated vegan cheese
2 slices low-carb bread
1/8 tsp black salt
1/4 tsp tumeric
1 tbsp oil
For tempeh marinade:
1/4 cup soy sauce
1 tbsp apple cider vinegar
1 tbsp truvia brown sugar
1/4 tsp smoked paprika
1/2 tsp onion powder
1/4 tsp garlic powder
2 tbsp extra virgin olive oil
Directions:
- Press the tofu for 10 minutes.
- Meanwhile, cut four thin slices of tempeh.
- In a small container, whisk together the tempeh bacon marinade ingredients and allow the tempeh to marinate for 10 minutes.
- Once the tofu is pressed, cut a rectangular slice. I cut the block by thirds (where I can get three slices from each block).
- Use a small cup to create a circular shape from the slice of tofu. Reserve the remaining tofu for a scramble or other dishes.
- Heat a small pan over medium heat and add the oil.
- When the oil is shimmering, add the tofu slice and sprinkle it with black salt and turmeric.
- Cook the tofu for 3 minutes, then flip.
- Add the vegan cheese on top of the tofu, cover the pan, and cook for another 3–4 minutes until the cheese is melted.
- Remove the tofu from the pan and set it aside.
- Add the marinated tempeh to the same pan and cook for 3–4 minutes on each side. Remove from heat.
- Toast two pieces of low-carb bread.
- Assemble the sandwich by placing the tofu with melted cheese (cheese side down) on one slice of bread.
- Add the tempeh slices and top with the second piece of bread.
Note: Adjust the marinade and tofu egg seasoning ratios if making more than one sandwich.
