Ingredients:
1 English cucumber, diced
1 cup corn (frozen or fresh)
1 avocado, diced
2-3 tbsp red onion, diced
1 garlic clove, minced
1 tbsp lime juice
1 tbsp extra virgin olive oil
1/2 tsp salt + more to taste
1/4 tsp pepper
Directions:
