I know, I know. Impossible sausage links are expensive, but that’s depending on where you buy it or if you catch a deal on it. Of course, you can also just buy if it’s expensive wherever you go in your city, but in mine I caught it for only $6.19 per case at Target, and another time it was buy one, get one free (BOGO) at my local grocery store. I was in heaven with the BOGO deal and bought myself 43 dollars worth.
So that’s why we are here. While I was excited about it, I then realized I had to create actual meals with it. This meal has to be cooked in increments, but it’s still easy to make no less.
IMPOSSIBLE (VEGAN) SAUSAGE SHEET PAN RECIPE
Cook Time: 1 hour
Prep Time: 10 minutes
Total Time: 1 hour and 10 minutes
Serving Size: 1 and 1/3 link + 1/3 of sheet pan veggies (rough estimate, divide as you like)
Total Servings: 3
Ingredients:
4 impossible bratwurst sausage links
3 carrots, cut in elongated ovals (see picture below)
1 12 oz bag of frozen brussel sprouts*
8 baby potatoes
1 onion, largely diced (see picture below)
3 tbsp olive oil
1 1/2 tsp garlic powder
1 1/2 tsp salt

Cut the carrot in half.

Directions:
- Set the oven to 400 degrees.
- Cut the onion and carrots (be sure the carrots are peeled).
- In a large mixing bowl, toss the onion, carrots, potatoes, brussel sprouts, olive oil, garlic powder, and salt.
- On a medium to large sheet pan, add the baby potatoes. Cook for 30 minutes in the oven.
- After 30 minutes, add the remaining ingredients to the sheet pan along with the sausage. You can wedge the sausages in between vegetables to make it easy.
- Cook for another 15 minutes.
- After 15 minutes, turn the sausages and around to cook on both sides.
- Cook for another 15 minutes.
