TOFU SPINACH SCRAMBLE WITH LOW-CARB WRAPS

14 oz extra firm tofu
1/2 onion, diced
1 garlic clove, minced
10 oz package frozen spinach
1 tbsp nutritional yeast
1/4 tsp salt
1 tbsp extra virgin olive oil
2 low-carb wraps

  1. Defrost spinach in the microwave. Press tofu for 10–15 minutes to remove excess water.
  2. While pressing, dice the onion and mince the garlic. Squeeze excess water from the spinach (careful—it may be hot).
  3. Heat 1 tbsp oil in a skillet over medium heat. Crumble in tofu, add onion, and cook 8–10 minutes until lightly golden.
  4. Stir in garlic, drained spinach, nutritional yeast, and salt. Cook 2–3 minutes more.
  5. Spoon 1 1/2 cups of the scramble into a low-carb wrap, roll, and serve.
