TOFU SPINACH SCRAMBLE WITH LOW-CARB WRAPS

14 oz extra firm tofu
1/2 onion, diced
1 garlic clove, minced
10 oz package frozen spinach
1 tbsp nutritional yeast
1/4 tsp salt
1 tbsp extra virgin olive oil
2 low-carb wraps
- Defrost spinach in the microwave. Press tofu for 10–15 minutes to remove excess water.
- While pressing, dice the onion and mince the garlic. Squeeze excess water from the spinach (careful—it may be hot).
- Heat 1 tbsp oil in a skillet over medium heat. Crumble in tofu, add onion, and cook 8–10 minutes until lightly golden.
- Stir in garlic, drained spinach, nutritional yeast, and salt. Cook 2–3 minutes more.
- Spoon 1 1/2 cups of the scramble into a low-carb wrap, roll, and serve.
